Cairnspring Mills started in 2016 when founder Kevin Morse and a band of farmers, community leaders, and bakers decided to join forces to craft nutritional flours with superior flavor. They decided to stone-mill local grain in small batches to ensure their high-quality standards were met across the board. Additionally, they resolved to take the time to preserve the grain’s germ by using traditional stones, all while adhering to strict organic processing standards. As a result, every flour they produce stands out; each one is milled from a single variety that can be traced back to the farm it came from.
The demand for organic flour has grown exponentially in a short span of time. Its rich levels of proteins, fibers, vitamins, and minerals are a healthier option, but they also sustain the local economy. In fact, during the early days of the pandemic, when so many grocery stores were sold out of staples like flour and bread, many turned to their local mills. Cairnspring’s efforts kept their neighbors stocked with nutritious flour while maintaining the farm-to-table pipeline with local farmers.
