Ulises Alvarez and Ava Mikolavich have lived up to that philosophy by pulling hearty loaves of naturally leavened bread from their ovens these past few years. Sampling their bread is a tradition, a treat, and even a sampling of what our region has to offer, as this husband and wife team have been making their rustic offerings with ancient grains sourced from Eugene, Oregon's Camas Country Mill.
Over the years, Ulises has worked the circuit of Portland landmarks, spending time at Fleur de Lis Bakery, Tabor Bread and Old Salt Marketplace. It was while working at Old Salt and its sister restaurant, Grain & Gristle, that he started baking and selling breads at local farmers markets. This labor of love eventually blossomed into Grano Bakery, which he and Ava launched out of a storefront in Oregon City in 2017.
As big believers in building community through “breaking bread” with our friends and neighbors, we knew we had to find the best bread available. As many Portlanders know—this is it.
